Rockstar has not published a GTA VI vehicle list. What exists are specific names in official material and what is seen working in the Extended Look. That is what we cover here, and nothing more.
Vehicles with official names
Most come from Rockstar's editions page, where they are listed as Ultimate Edition content:

On the water
The Extended Look shows airboats, jet skis and canoes. It makes geographic sense: with the Leonida Keys and the Grassrivers swamps, some areas are easier to reach by water than by road.
Driving and stealing, now harder
Rockstar has said driving and car theft will be "more challenging", part of a broader push toward realism. Approaching a car, you can smash the window or pick the lock, depending on your tools.
Fuel, garages and tuning
Cars burn fuel. Refuelling takes about 10 seconds, and gas stations also repair vehicles and recharge electric ones, which exist in the game too. We cover it here.
For customisation, official material names two garages: Rideout Customs and One-Eyed Willie's.
How many vehicles will GTA 6 have?
Rockstar has given no figure. For reference, GTA V passed 700 vehicles through its online updates.
Will there be planes in GTA 6?
Rockstar has not shown flyable planes. Planes and helicopters appear in Vice City's sky in official material, but that does not confirm they can be flown.
Can you tune cars in GTA 6?
Yes. Rockstar names two customisation garages, Rideout Customs and One-Eyed Willie's, among the Ultimate Edition content.
